My girl Ina, Giada, and of course my mama- coming in clutch with three yummy salmon recipes that are not only delicious but also healthy and easy for a nigby that you don’t want to spend hours in the kitchen.

1. Ina Garden’s Salmon Tacos- one thing I added here was jalapeños to the slaw. Gave it an extra punch. This recipe is also great for leftovers. The slaw has a nice crunch with compliments the softness of the avocado and salmon.

2. Mama’s Honey Balsamic Salmon with Corn and Tomato Succotash- one thing here is I think you have to play with your stovetop And understand that each stove and piece of salmon is unique so the cooking times were a bit off for me but just use your eye and cut into the salmon to see if it’s done, if need be. Get the skin nice and crispy and you can eat that too! Can always finish it off in the oven to if it’s getting too crispy. Served this with roasted orka on the side to compliment the tartness of the corn and tomato succotash. Fun fact: did you know you you can cook an ear of corn in the microwave for 4 minutes instead of boiling it? For two ears I would recommend 6-8 minutes. Happy cooking!

3. Giada’s Dijon and Rosemary Salmon

- this recipe is so incredibly easy and perfect the way it is. I served it with corn and green bean succotash from our garden and roasted smashed red potatoes with herbs and a sirracha aioli. https://www.foodnetwork.com/recipes/giada-de-laurentiis/broiled-salmon-with-herb-mustard-glaze-recipe-2103443
