Secret Family Recipe for the Best Meatballs

This recipe is such a staple in the Rogan house but yet when I asked my dad how he makes them he would not write it down and told me over the phone as I walked through Walmart doing my essential shopping haha.


Below are just estimations since I didn’t really measure anything but just feel it out and see what works best for you!



Recipe

  • 1 lb ground beef

  • 1/2 lb ground pork, you could also put in another 1/2 lb ground veal or lamb if you have it

  • ~ 1 tsp of each: oregano, basil, pepper, salt

  • ~1/2 tsp ground sage (not necessary but extra flavor)

  • ~ 1/3 c Parmesan cheese

  • Splash of red wine

  • Few dashes of Worcestershire sauce

  • 1/4 of a loaf of crusty bread that has been soaked in milk for about 15-30 min. I used Italian bread

  • ~ 1/3 c Italian bread crumbs

  • ~1/3 c chopped onion

  • 2 chopped garlic cloves

  • 1 egg



Directions

  1. Heat oil in a skillet on about medium, just enough to cover the bottom of the skillet

  2. Mash/Meld together ingredients with your hands being careful not to over handle as they will get tougher the more you handle them

  3. Create meatballs to your desired size and place in hot oil until they get a nice golden brown crust on both sides.

  4. Depending on the size of your meatballs, and the time and temp of the oil they have been sitting in, if they are not cooked all the way through there are two things you can do:

  5. Heat your oven to 350 and bake after browning for another 10 min. OR worth the tomatoe sauce you are using, you can heat that up in a pot and put your meatballs in there for about another ten minutes. Either way, the meatballs will be cooked all the way through.

  6. I served mine with a spicy tomato sauce from Rao‘s (Arrabbiata sauce) and zucchini noodles.
