Looking for something relatively healthy but also feels like comfort food? Look no further, recipe posted below for one of our favorite family recipes.

Cooking Notes:

  • I like to double the sauce so I have a little extra

  • I make the sauce and then put it over the eggplant only for the last 2-5 minutes while it’s in the oven. This prevents it from getting too soggy!
